Black Bean & Corn Salad
Quick salad, that tastes
good and adds color to your plate.
1 can (15 oz.) black beans, drained and rinsed
1 can (11 oz.) golden sweet corn, drained
1 tomato, chopped
1/4 C chopped fresh cilantro
1/8 C chopped red onion
3 tablespoons lemon juice
2 tablespoons olive oil
salt and pepper to taste
Combine all ingredients in a bowl. Refrigerate until ready to serve.
Serves 10.
