Sheppard's, (Shepperd's, Shepherd's,
Shephard's) Pie
This is one of my
"childhood favorite" dishes. My mom used to make this alot and it's one of those
yummy "comfort foods". Of course she put lots of onions in hers and she'd always
leave one corner for me, without onions. I don't put whole onions in mine,
because nobody in my family likes onions, but I do have to leave the corn out of
one corner for Miss Katie ;o)
Ingredients:
2 T Butter
Chopped Onion
1lb Ground Beef
Choice of Veggies - I usually use 1can of corn and 1 can of green beans You could use frozen veggie mix, broccoli, cauliflower - ANYTHING!
3 c. Mashed Potatoes
1 1/2 c. Shredded Cheddar
Preparation:
Melt butter and add onion. Sautee until brown
and add ground beef.
Put beef mixture into bottom of casserole dish
Add veggies and then spread the mashed potatoes over the top.
Top with cheddar cheese
Bake at 350 for 30 minutes. If using frozen
veggies, bake for an hour or so. I would use pre-cooked veggies.
