Tuna Casserole

Ingredients:

8 oz Package of Noodles
3 T. Butter or margarine
1/2 c. Celery, finely chopped
1/3 c. Onion, finely chopped
1/4 c. Carrot, finely chopped
2 T. Flour
2 c. Milk
4 oz Cream Cheese
1 c. American Cheese, cubed
6 1/2 oz Can Tuna
1/2 t. Salt
1/4 t. Pepper
1 c. Crushed potato chips
Directions:
  • Cook Noodles according to package directions. Drain and set aside.
  • Melt butter in a saucepan, and add celery, onion and carrot. Cook 'til tender but not brown.
  • Stir in flour until a paste is formed.
  • Add milk all at once - cook and stire until mixture is thickened and bubbly.
  • Add Cream and American Cheeses, stirring 'til completely melted.
  • Fold tuna, salt, pepper, and cooked noodles into cheese sauce mixture, and place mixture in a buttered casserole.
  • Sprinkle with crushed potato chips.
  • Bake for 30 minutes at 350.
  • Serves 5. I double this recipe for my family and it leaves a little bit left over for lunch the next day.
